Kopi is the Indonesian word for coffee, and luwak is the Indonesian word for a small ferret-like animal that resembles a cat. In any case, this designation is not entirely accurate, because civets are not strictly speaking cats. It's a similar animal native to Southeast Asian countries like Indonesia, the Philippines, and Vietnam.


Civet cats play an essential role in the production of kopi luwak. First of all, they are the custodians of quality, as they sort the coffee cherries and discard inferior or damaged fruit. The Kopi Luwak therefore only contains coffee cherries of the highest quality.

Not only does it help select the best cherries, but it also improves the flavor of the coffee by passing through the civet's digestive system. A special enzymatic process takes place in the stomach of the civet cat, in which acids interact with the beans. This makes the beans less acidic and softer.
